Sol y Sombra (meaning Sun and Shade) came about when we set out to find a fitting use for the wonderful old church next door to our restaurant Nicks in Killorglin. Having visited many bars, restaurants, markets and wineries in many parts of Spain we discovered the diversity of regional tapas and variety of different wine styles both modern and traditional. Most of all we fell in love with the concept of the local tapas bar - the diversity and seasonality of simple yet well prepared food, the informality of the dining experience, the buzz of people coming and going feasting on tasty bite sized snacks and quaffing a variety of different wines by the glass, a place to enjoy conversation and the buzz - we believed that this could work in Ireland.
